chilli chocolate fillet ♥

ingredients:

I400g beef fillet

1 tbsp olive oil

For The Chocolate-Chilli Sauce


125ml fresh beef stock

65ml red wine

1 small red chilli, finely chopped

70g good quality dark chocolate

40ml reduced fat cream

15ml rosemary, roughly chopped

Salt and pepper, to season

method:

To make the chocolate-chilli sauce, place the beef stock, red wine and chilli in a saucepan and allow to simmer until reduced by half.

Whisk in the chocolate and continue stirring until the chocolate is melted and the sauce is thickened.

Add the cream and chopped rosemary. Season to taste.

Place the fillet on a board and rub with olive oil.

Sear in a hot griddle pan, turning frequently for two to three minutes or until cooked to your liking.

Serve immediately with the chocolate-chilli sauce.
